Springtime in Flower Mound is one of my favorite times of year. Maybe I didn’t quite follow through with some of my New Year’s resolutions, but never fear, spring is here!  Motivation levels are at a high for starting anew, not to mention the beauty of the wild flowers on “The Mound” that will definitely get me going.

To our family, springtime means organizing and cleaning out closets, flowerbeds, and eating a little healthier while enjoying all of the fresh fruits & veggies.  Beautiful spring weather also means plenty of sunny weekend picnics!

Great tasting BBQ Ribs without the hastle!  Cooking the ribs in the over prior to the crock pot seals in the juices and makes them scrumptious!  Recipe courtesy of allrecipes.com.

1. Preheat oven to 400 degrees.
2. Season ribs with salt and pepper. Place in a shallow baking pan. Brown in oven 15 minutes. Turn over, and brown another 15 minutes; drain fat.
3. In a medium bowl, mix together the ketchup, chili sauce, brown sugar, vinegar, oregano, Worcestershire sauce, hot sauce, and salt and pepper. Place ribs in slow cooker. Pour sauce over ribs, and turn to coat.
4. Cover, and cook on Low 6 to 8 hours, or until ribs are tender.

Your family will have an evening of fun & games on Friday.  Meet local children’s authors, Toybox the Clown, enjoy games, activities and refreshments.  $5 per child.  Proceeds from book sales and admission will benefit LEF and will be distributed back to LISD school library programs.

LEF will distribute the proceeds amongst the participating elementary schools in the form of grants based on library needs.  The following elementary and middle schools are participating in this very worthwhile event.  Bring your children and help support their school’s library by giving their school a chance to earn a grant for library improvements.

This super quick and healthy recipe makes for a light dinner that’s still quite satisfying.  Perfect for the family or entertaining friends, this pasta dish is sure to be a hit.  Recipe courtesy of allrecipes.com.

• Bring a large pot of lightly salted water to a boil. Add the penne pasta, and cook until tender, 8 to 10 minutes.
• Meanwhile, heat 1 tablespoon of olive oil in a skillet over medium heat. Place bacon in the skillet, and cook until browned and crisp. Add garlic, and cook for about 1 minute. Stir in the tomatoes, and cook until heated through.
• Place the spinach into a colander, and drain the hot pasta over it so it is wilted. Transfer to a large serving bowl, and toss with the remaining olive oil, and the bacon and tomato mixture.
