Mealtime Monday: Veggie Fetti Noodle Pie

| Veggie Fetti Noodle Pie |
| Cooking spray | 4-6 ounces fresh spinach |
| 1 pound penne pasta, cooked al dente according | 2 teaspoons salt |
| to package directions | 1/2 teaspoon pepper |
| 1 tablespoon olive oil | 1 cup cherry tomatoes, halved |
| 1 red bell pepper, diced | 6 eggs |
| 1 zucchini, diced | 1 cup ricotta cheese |
| 1 yellow squash, diced | 1/2 cup mozzarella cheese, shredded |
| 1. Preheat oven to 325°F and coat a 9×13” baking dish with cooking spray. 2. Heat olive oil in a skillet over medium-high heat. Add bell peppers, zucchini and squash, then sauté 3-4 minutes. Stir in spinach and cook an additional 2-3 minutes, until spinach is barely wilted. Season with salt and pepper. 3. In a large mixing bowl, toss pasta with cherry tomatoes and sautéed veggies. In a separate bowl, whisk together eggs and ricotta cheese. Pour mixture over pasta and veggies, then stir to combine well. 4. Pour into baking dish and top with mozzarella cheese. Bake until cheese bubbles and casserole is heated through, about 40-45 minutes. |
