Through February 10th, Polka Dot Cottage Photography is offering Valentine Mini Sessions!

Mini Sessions are $50 and are 15 to 20 minutes in length. Your online gallery will include 4 to 5 photos. Two 5×7 prints OR 24 wallets are included in your session fee! Wallets may be a special Valentine design or just a print. Additional prints are available at the prices listed on the Polka Dot Cottage Photography website. 

Mini sessions must take place at a location in Flower Mound.

There are many Valentine card options…wallets, 5×7s 5×5s, and bookmarks!

An adorable red heart chalk board will be availabe for the mini sessions, but get creative! Bring whatever fun Valentine props you may have.

Mealtime Monday: Slow Cooker Chicken Noodle Soup

Crock Pot Chicken Noodle Soup

Continuing with the winter soup theme to warm our tummies, here is another crock pot recipe that you can throw together in the morning and enjoy around the dinner table that night.   Let the kids help pour all the ingredients into the slow cooker and bask in the creation at dinnertime.  This recipe came from Betty Crocker’s Easy Family Dinners: Simple Recipes and Fun Ideas.

 
Slow Cooker Chicken Noodle Soup
3/4 lb. boneless, skinless chicken thighs, cut into 1″ pieces 1 14.5 oz. can chicken broth
2 medium celery stalks, sliced (1 1/4 cup) 1 tsp. dried thyme leaves
1 large carrot, peeled and chopped (3/4 cup) 1 10 oz. bag of frozen peas
1 medium onion, chopped (1/2 cup) 1 cup uncooked egg noodles  or instant rice
1 (14 1/2 oz.) can diced tomatoes, undrained 1 TBLSP chopped fresh parsley

1.  Spray 10-inch skillet with cooking spray; heat over medium heat.  Cook chicken in skillet about 5 minutes, stirring frequently, until brown

2.  Mix chicken and remaining ingredients except peas, noodles and parsley in 3 1/2 to 4 quart slow cooker.

3.  Cover and cook on low heat setting 6 hours 30 minutes to 7 hours.

4.  Stir in peas and noodles.  Cover and cook on low heat setting about 10 minutes or until noodles are tender.  Stir in parsley just before serving.

Stir in the pasta. Simmer until the pasta is tender but still firm to the bite, about 8 minutes. Season with salt and pepper to taste.

Ladle the soup into bowls. Sprinkle with the parmesan and serve.

Makes 6 servings.

The instructor for this workshop is Pamela Ryan LMT RYT. Pamela has been a licensed massage therapist since 1997, certified in a variety of modalities, including sports, deep tissue, neuromuscular and Thai massage, and is a Yoga Alliance 200-hour instructor. Pamela studied Thai massage with C. Pierce Salguero, Director of Tao Mountain, and is certified at the Master’s Level.

Lentil Soup

I have to be honest.  Before I made this soup over the weekend, I had never had a lentil in my life. I wasn’t even sure what they were (a little like a pea and a little like a bean).  Something about the recipe, and maybe the cold, drizzly weather, had my stomach calling.  I made the soup and the whole family loved it!  S-C-O-R-E!  Enjoy!  

 
Lentil Soup
2 TBSP Olive Oil 1 (14 1/2 oz.) can diced tomatoes
1 medium onion, chopped 1 pound lentils (approx. 1 1/4 cups)
2 carrots, peeled and chopped 11 cups low-salt chicken broth
2 celery stalks, chopped 4-6 fresh thyme sprigs
2 garlic cloves, chopped 2/3 cups dried elbow pasta
salt and freshly ground pepper Topping: shredded parmesan cheese
   

Heat the oil in a heavy pot over medium heat.  Add the onion, carrots and celery.  Add the garlic, salt and pepper and saute until all the vegetables are tender, about 5-8 minutes.  Add the tomatoes with their juices.  Simmer until the juices evaporate a little and the tomatoes break down, stirring occaionally, about 8 minutes.  Add the lentils and mix to coat.  Add the broth and stir.  Add the thyme sprigs.  Bring to a boil over high heat.  Cover and simmer over low heat until the lentils are almost tender, about 30 minutes.

Stir in the pasta.  Simmer until the pasta is tender but still firm to the bite, about 8 minutes.  Season with salt and pepper to taste.

Ladle the soup into bowls.  Sprinkle with the parmesan and serve. 

cook on HIGH 4 to 6 hours or on LOW 8 hours. Serve soup with desired toppings.
Makes 10 cups.
