Sweet Potato Casserole

This easy sweet potato casserole is a favorite dish to bring to potlucks, dinner parties or school events.  It tastes so good, the kids won’t even realize it’s good for them too!
Sweet Potato Casserole

4 1/2 pounds sweet potatoes Topping:
1 cup sugar 1/2 cup packed brown sugar
1/4 cup milk 1/2 cup pecan pieces
1/2 cup butter, softened 2 TBLSP flour
2 large eggs 3 TBLSP butter, softened
1 tsp. vanilla extract
1/4 tsp. salt
1 1/2 cups mini marshmallows (optional)

  • Bake sweet potatoes at 400° for about 1 hour or until tender. Let cool to touch; peel and mash sweet potatoes. (You can always use canned sweet potatoes, but trust me, you want to take the time to use fresh….they taste so much better!)
  • Beat mashed sweet potatoes, sugar, and next 5 ingredients with a potato masher or electric mixer (at med. speed) until smooth. Spoon potato mixture into a greased 9 X 13-inch baking dish.
  • Combine topping ingredients in a small bowl.  Sprinkle over top of sweet potato mixture.
  • Bake at 350° for 30 minutes. Remove from oven; let stand 10 minutes. If desired, sprinkle marshmallows on top; bake 10 additional minutes or until marshmallows are golden brown.  Let stand 10 minutes before serving.

Easy, Easy Pumpkin Pie

This pumpkin pie recipe is so easy to make, you will be volunteering to bring the pie all season long!  Do note that this pie does not contain a regular pie crust, the mix is in the filling!  We loved this slight variation from the normal pumpkin pie recipe.  Thanks, Betty Crocker!
Impossibly Easy Pumpkin Pie

1 cup canned pumpkin (not pumpkin pie mix) 1 1/2 tsp. pumpkin pie spice
1/2 cup Original Bisquick Mix 1 tsp vanilla
1/2 cup sugar 2 eggs
1 cup evaporated milk whipped topping, if desired
1 TBLSP butter or margarine, softened

  • Heat oven to 350ºF. Grease 9-inch pie plate.
  • Stir all ingredients except whipped topping until blended. Pour into pie plate.
  • Bake 35 to 40 minutes or until knife inserted in center comes out clean. Cool 30 minutes. Refrigerate about 3 hours or until chilled. Serve with whipped topping. Store covered in refrigerator.
