Supreme Pizza Casserole

Your friends and family will love the new spin on pizza.  This pasta dish is loaded with cheeses, meats and tomatoes and is fabulous!  Your family will gobble it up and beg for more.  The recipe makes 2 casseroles, one for now and one for later or to share with a friend.
Supreme Pizza Casserole
 
8 oz. uncooked fettuccine 1/2 tsp. sugar
2 lbs. ground beef 1/2 tsp. garlic powder
1 medium onion, chopped 1/2 tsp onion powder
2 cans (8 oz ea.) mushroom stems & pieces, drained 1/2 tsp dried oregano
1 can tomato sauce (15 oz.) 4 cups shredded park-skim mozzarella
1 jar pizza sauce (14 oz.) 1 package sliced pepperoni (3 1/2 oz.)
1 can tomato paste (6 oz.) 1/2 cup grated Parmesan Cheese
 
  • Cook fettuccine according to package directions.  Meanwhile, cook beef and onion over medium heat until meat is no longer pink; drain.  Stir in mushrooms, tomato sauce, pizza sauce, tomato paste, sugar and seasonings.  Drain Pasta; stir in meat sauce.
  • Divide half of the mixture between two greased 2-qt baking dishes; sprinkle each with 1 cup mozzarella cheese.  Repeat layers.  Top each with pepperoni and Parmesan cheese.
  • Cover and bake at 350 degrees for 20 minutes.  Uncover; bake 10-15 minutes longer or until heated through.

You are invited to attend a FREE event this Wednesday, September 22nd from 7 PM to 8 PM at the Town of Flower Mound Public Library, 3030 Broadmoor Lane. 

The presentation, “Why Grow Native Plants” by Cynthia Maguire, President-Elect of the Native Plant Society of Texas will be held in the Program Room immediately to the right of the library entrance.  The presentation delivers a straight-forward message about how our individual choices make a difference in creating biodiversity and a more sustainable environment right in our own backyards.

Why Grow Native Plants?

Planting and landscape design choices are critical to your yard, our town and the planet.  Cynthia Maguire, President-Elect, Native Plant Society of Texas provides an overview of how gardening and landscape decisions made by homeowners, homeowner associations and business owners profoundly impact the natural resources and ecosystems of Texas.  Her presentation reveals how simple, yet informed plant selections, yield big results in terms of water conservation, beauty, habitat biodiversity and ultimately the survivability of our ecosystem. Peanut Butter Oat Cookies

Peanut Butter Oat Cookies

It’s time for an easy dessert on Mealtime Monday!  Oats, peanut butter and chocolate make these soft, chewy cookies hearty.  Our whole family agrees that this recipe is a winner.  The are great sellers at bake sales too!  This recipe was found in Taste of Home recipe book.
Peanut Butter Oat Cookies
 
1 1/2 cups peanut butter 1 tsp. vanilla extract
1/2 cup butter, softened 4 1/2 cups quick cooking oats
1 cup sugar 2 tsps. baking soda
1 cup packed brown sugar 1 cup mini semisweet chocolate chips
3 eggs 1 cup mini M&M’s
 
  • In a large bowl, cream peanut butter, butter and sugars until light and fluffy.  Add eggs, one at a time, beating well after each addition.  Beat in vanilla.  Combine oats and baking soda; gradually add to creamed mixture and mix well.  Stir in chocolate chips and M&M’s
  • Drop by teaspoonfuls 2 inches apart onto ungreased bakin sheets.  Bake at 350 degrees for 10-12 minutes or until edges are browned.  Remove to wire racks.
