Reading Friends is an academic preschool for children ages 2 through Kindergarten.  They are currently looking to hire a wonderful teacher….the ideal candidate must be loving, nurturing, organized, able to develop positive relationships with both the child and parent and committed to academic excellence.   Teacher certification/experience working with young children required.  Morning classes only.  Salaried position following the LISD calendar.

Creamy Garlic Mashed Potatoes

This simple recipe is an easy twist to a standard staple…mashed potatoes.  The addition of the cream cheese makes these spuds super creamy and addicting!
Creamy Garlic Mashed Potatoes
2-1/2 lb. baking potatoes (about 7)
1 Tbsp.  butter or margarine
   peeled and quartered
1 tsp. salt
4 cloves  garlic, minced
 
1 tub (8 oz.) PHILADELPHIA Cream
 
  Cheese Spread  
  • COOK potatoes and garlic in boiling water in large saucepan 20 min. or until potatoes are tender; drain.
  • MASH potatoes until smooth.
  • STIR in remaining ingredients until blended.

    Shredded Beef Sandwiches in Your Crock Pot

    Crock Pot Shredded Beef

    Beef sandwiches couldn’t be easier than with this tasty recipe.  This makes a big batch so be prepared to enjoy some leftovers!  We found this recipe in Taste of Home magazine
    Crock Pot Shredded Beef Sandwiches
     
    1 boneless beef chuck roast (about 4 lbs.) 2 Tblsp. cider vinegar
    1 large onion, thinly sliced 1 tsp. salt
    1 cup ketchup 1/4 tsp. pepper
    1/4 cup lemon juice 1/2 tsp. Liquid Smoke (optional)
    3 Tblsp. Worcestershire sauce 24 kaiser rolls or hamburger buns
    2 Tblsp. brown sugar  
     
    • Cut roast in half; place in 5 qt. slow cooker.  Top with onion.  Combine the next eight ingredients; pour over roast.  Cover and cook on low for 8-9 hours or until the meat is tender.
    • Remove roast and cool slightly; shred meat with two forks.  Skim fat from cooking liquid.  Return meat to slow cooker; heat through.  Using a slotted spoon, place 1/3 cup meat mixture on each roll.
    • Makes 24 servings.  Perfect to freeze and take out on a rainy day!

    Crispy Oven Fried Fish Fingers

    Fried fish fingers made healthy!  This heathier version of the kid standard, fish sticks, will please the entire family.  With only 175 calories, 6g of total fat and 7g of carbs, this is a great entree for everyone, even if you’re watching your waistline!
    Crispy Oven Fried Fish Fingers
     
    1/2 cup seasoned dry bread crumbs 1/8 tsp. garlic powder
    1 Tblsp. grated parmesan cheese 4 cod fillets (about 1 pound)
    2 tsp. grated lemon peel 3 Tblsp. lemon juice
    3/4 tsp. dried marjoram leaves 2 Tblsp. dry white wine or water
    1/2 tsp. paprika 1 Tblsp. Crisco Oil
    1/4 tsp. dried thyme leaves
     
    • Heat oven to 425 degrees.  Oil 13 x 9 x 2 inch pan lightly.  Place a cooling rack on countertop.
    • Combine bread crumbs, Parmesan cheese, lemon peel, marjoram, paprika, thyme and garlic powder in shallow dish.
    • Rinse fillets.  Pat dry.
    • Combine lemon juice and wine in another dish.  Cut fish into desired size “fingers” or “sticks”.  Dip each fish finger into lemon mixture, then into crumb mixture, coating well.  Place in pan.  Drizzle with oil.
    • Bake at 425 degrees for 10 to 12 minutes or until fish flakes easily with a fork.  Do not overbake!  Remove to cooling rack.  Let stand 2 to 3 minutes in pan.  Remove to serving plate.  Garnish if desired.
