Taco Pie

Taco Pie FlowerMoundFamily.com

Tacos are a huge hit in our house, so when I found this recipe, I had to give it a try.  It’s a great variation to the typical taco in an all-in-one pie.  Our family loved it!  You can buy mild taco seasoning and/or add 1/2 a packet for a less spicy version.
Taco Pie

1 lb. lean ground beef 1/3 cup salsa
1 medium onion, chopped 1 baked 9 inch pastry shell
1 1/4 oz. package taco seasoning mix 1/2 cup taco chips, crushed
3/4 cup water 1/4 cup cheddar cheese, shredded
16-oz can refried beans shredded lettuce, chopped tomatoes

Preheat oven to 400 degrees.  Brown ground beef and onion in large skillet.  Drain off fat.  Add taco seasoning mix and water, stirring well.  Bring mixture to boil.  Reduce heat and simmer 15 minutes.

Combine beans and salsa.  Spoon half of the bean mixture into bottom of pastry shell.  Top with half of the meat mixture and taco chips.  Repeat layers with bean and meat mixtures and top with shredded cheese.

Bake for 20 minutes.  Top with lettuce, tomatoes and additional salsa, if desired.
