Swiss Chicken Casserole

This Swiss Chicken casserole is so very easy to make and so very yummy to eat. It’s maybe not the lowest calorie, but it’s okay to splurge now and then, right? Pair it with a veggie and you’re done, Mom! |
| Swiss Chicken Casserole |
| 6 skinless, boneless chicken breasts | 1/4 cup milk |
| 6 slices of swiss cheese | 2 cups herb seasoned stuffing mix |
| 1 (10.75 oz.) can cream of chicken soup | 1/3 cup butter |
|
Preheat oven to 350 degrees. Arrange chicken in a greased 12 x 8 x 2 baking dish. Top with swiss cheese slices. Combine soup and milk and stir well. Spoon mixture over chicken and sprinkle with stuffing mix. Drizzle butter or margarine over crumbs. Cover and bake at 350 degrees for 50 minutes. Get ready for goodness! |

Taco Pie

Tacos are a huge hit in our house, so when I found this recipe, I had to give it a try. It’s a great variation to the typical taco in an all-in-one pie. Our family loved it! You can buy mild taco seasoning and/or add 1/2 a packet for a less spicy version. |
| Taco Pie |
| 1 lb. lean ground beef | 1/3 cup salsa |
| 1 medium onion, chopped | 1 baked 9 inch pastry shell |
| 1 1/4 oz. package taco seasoning mix | 1/2 cup taco chips, crushed |
| 3/4 cup water | 1/4 cup cheddar cheese, shredded |
| 16-oz can refried beans | shredded lettuce, chopped tomatoes |
|
Preheat oven to 400 degrees. Brown ground beef and onion in large skillet. Drain off fat. Add taco seasoning mix and water, stirring well. Bring mixture to boil. Reduce heat and simmer 15 minutes. Combine beans and salsa. Spoon half of the bean mixture into bottom of pastry shell. Top with half of the meat mixture and taco chips. Repeat layers with bean and meat mixtures and top with shredded cheese. Bake for 20 minutes. Top with lettuce, tomatoes and additional salsa, if desired. |
Corn Dog Twists

Your kids will have fun making this playful variety on the same old hot dogs and buns ans they will eating them! Set out bowls of ketchup, mustard and relish for easy dipping. Talk about a quick lunch or snack! |
| Corn Dog Twists |
| 1 tube (11 1/2 oz.) refridgerated corn | 1 tblsp. butter, melted |
| bread twists | 1 tblsp. grated parmesan cheese |
| 8 Hot Dogs |
|
Separate corn bread twists; wrap one strip around each hot dog. Brush with butter; sprinkle with parmesan cheese. Place on a lightly greased baking sheet. Bake at 375 degrees for 11-13 minutes or until golden brown. |
