Super Side: Herb Roasted Potatoes

Take a break from fries and give these scrumptious potatoes a try. We weren’t sure if the kiddos would go for them, but they loved them. And they are much better for you than greasy french fries. Did you know that 7 oz. supersize fries can have up to 610 calories and 29 grams of fat? Ouch! These potatoes are extremely simple to make and very tasty. Have a very picky eater? Try sprinkling some parmesan cheese on them or offering the ketchup they are used to and we’ll bet they eat them all up! The recipe, as printed, only serves about 2, so adjust accordingly. |
| Herb Roasted Potatoes |
| 4-6 very small new potatoes, red or purple | 1 Tablespoon fresh rosemary, minced |
| 1 Tablespoon olive oil | (or 1 teaspoon dried) |
| Salt (optional) |

Preheat oven to 450 degrees. Wash and cut potatoes in half or quarters, depending on size. Put oil on a 15 1/2″ x 10 1/2″ x 2″ baking pan. Heat 3 minutes on the lowest oven rack. (Do not leave in longer, or oil will begin to smoke!) Add potatoes and bake for 10 minutes. Carefully turn potatoes with spatula and sprinkle with rosemary and salt, if desired. Bake 10 minutes more. Serve immediately |

| On Tuesday, February 2nd, local business women, Debbie Sardone and Debbie Richter, Founder/Board President and Board Vice-President, respectively, of the national nonprofit Cleaning For A Reason, and local businesses Buckets & Bows Maid Service and Majesty’s Restaurant, in Parker Square, are teaming up to bring you an evening of dining and drama from Andrew Lloyd Weber’s The Phantom of the Opera. Let yourself be swept away by dining decadence and the rich, haunting lyrics of the live music and song that only Majesty’s can offer. You will also enjoy tempting silent auction items that reflect the grand evening. |

Proceeds from the evening will benefit Cleaning For A Reason , the national nonprofit that provides free, professional housecleaning services to women across the country undergoing cancer treatment. “We’ve planned a fabulous evening of dining and drama, starting at 7:00 PM,” Debbie Sardone said, “and, if your first name is ‘Christine,’ you’ll receive a special gift just for joining us!!” “Buckets & Bows Maid Service’s longstanding practice of providing free, professional house cleaning services to local women undergoing cancer treatment was taken nationwide, in 2005, when the Cleaning For A Reason Foundation was created,” said Sardone. “We continue to be committed to increasing The Foundation’s reach to every woman who needs its help.” The dinner includes a 4 course meal and your first glass of wine. Bow Tie Lasagne

If you are craving lasagne, but don’t have the time or energy to make the traditional recipe, try this super quick, super easy Bow Tie Lasagne that you can make in your wok…in about 25 minutes! If you need to cut the fat, pick up the low fat or skim milk cheeses. |
| Bow Tie Lasagne |
| 4 oz. bow tie pasta | 3/4 lb. lean ground beef |
| 1 cup ricotta cheese | 1 clove garlic, minced |
| 4 oz. soft-style cream cheese | 15 1/2 oz. jar of spaghetti sauce |
| 1/2 cup shredded mozzarella cheese | Topping: |
| 1/4 cup grated parmesan cheese | 1/2 cup shredded mozzarella |
| 1/2 tsp. Italian Seasoning | 2 T. grated parmesan cheese |

In a large saucepan, cook pasta in boiling water for 10-12 minutes or just until tender. Drain and set aside. In a medium mixing bowl, stir together ricotta, cream cheese, mozzarella, parmesan and Italian seasoning. Set aside. Preheat wok (or skillet) over high heat. Stir fry ground beef and garlic until meat is brown. Pour off any fat. Stir in spaghetti sauce and cooked noodles. Spoon cheese and seasoning mix over meat and noodles. Do not stir. Sprinkle with remaining mozarella and parmesan. Cover and cook about 5 minutes or until heated thoroughly Yield: about 4 servings |
