Super Side: Herb Roasted Potatoes

Take a break from fries and give these scrumptious potatoes a try. We weren’t sure if the kiddos would go for them, but they loved them. And they are much better for you than greasy french fries. Did you know that 7 oz. supersize fries can have up to 610 calories and 29 grams of fat? Ouch! These potatoes are extremely simple to make and very tasty. Have a very picky eater? Try sprinkling some parmesan cheese on them or offering the ketchup they are used to and we’ll bet they eat them all up! The recipe, as printed, only serves about 2, so adjust accordingly. |
| Herb Roasted Potatoes |
| 4-6 very small new potatoes, red or purple | 1 Tablespoon fresh rosemary, minced |
| 1 Tablespoon olive oil | (or 1 teaspoon dried) |
| Salt (optional) |

Preheat oven to 450 degrees. Wash and cut potatoes in half or quarters, depending on size. Put oil on a 15 1/2″ x 10 1/2″ x 2″ baking pan. Heat 3 minutes on the lowest oven rack. (Do not leave in longer, or oil will begin to smoke!) Add potatoes and bake for 10 minutes. Carefully turn potatoes with spatula and sprinkle with rosemary and salt, if desired. Bake 10 minutes more. Serve immediately |
