Easy Shepard’s Pie

This simplified version of the classic comfort food will have your family asking for more. This dish includes all the food groups, so once it’s made, your done! If you need a lower calorie version simply use the low fat versions of milk, cheese and alfredo sauce. We love this healthier version made with the ground turkey instead of beef. Prep time is only about 15 minutes with 35 minutes of cook time. |
| Easy Shepard’s Pie |
| Non-stick cooking spray | 1 1/2 cups milk |
| 1 lb ground turkey | 1 cup frozen peas |
| Salt and pepper | 1 cup frozen corn |
| 1/2 tsp dried thyme | 1 1/2 cup grated cheddar cheese |
| 1 7.8 oz. box of instant scalloped potatoes | 16 oz. jar of alfredo sauce |
| (don’t use seasoning pack) |

Preheat oven to 400 degrees. Coat large skillet with spray; place on medium heat. Brown meat for 5 minutes, or until no longer pink, stirring often. Add salt, pepper, thyme and stir. Line bottom of a 9 x 13 inch casserole with a single layer of potatoes. Pour milk over. Top with peas and corn, then meat, then half the cheese, then sauce. Top with remaining cheese. Bake on middle rack for 30 minutes or until golden brown. Yield: about 8 servings |
